Quick and easy eggless Tiramisu - no bake cake for a romantic dinner date at home

Tiramisu has been the most exquisite dessert for us, because of its rich coffee flavour and creamy texture. It was in my to-do list for a very long time, and I was so lazy to make it from scratch. In India it is difficult to get the ready made savoiardi or sponge finger biscuits. And mascarpone cheese availability is also an expensive and rare ingredient here. But you can make them at home if you have some patience. I was lucky that I had been to Europe last year and got a chance to get these biscuits to India. Since then I was planning to make this recipe for a special day, we are cutting calories otherwise you see :)

Tiramisu is a famous coffee-flavoured Italian dessert. It is generally made by dipping the ladyfinger biscuits in freshly brewed coffee, and layering it with a whipped custard mixture of eggs, sugar, and mascarpone cheese, flavoured with cocoa. The original recipe might be a bit tedious with beating egg yolks and we generally do not like to eat raw eggs in our cakes/desserts. So I wanted to go eggless and keep things simple and quick. Like me, you can choose to buy readymade ladyfinger biscuits (now its available online) from Nature's basket or Amazon. Or you can make do with vanilla sponge cake slices - bake them for 10 mins until they are crisp.

My best and favorite Cream of Pumpkin Soup Recipe

I know it's been long since I posted a recipe on my site. But I did try a lot of recipes meanwhile and i hope I bombarded you with loads of pictures of mouthwatering food in Instagram and facebook :P I hope there will be a software in future soon, which does the writing for you when you cook... that would be my one last wish :)

Now to my favorite recipe of Cream of Pumpkin soup, this is a sure hit among my guests, kids and sandy. It's the best comfort food for this winter and quite easy to make once you know the trick. I have tried this recipe with and without white sauce as detailed below. Depends on how much time you have to make this and if you are worried about the calories :) So hold on and try any of these versions. But if you are making it for the kids, do try with white sauce. They love it!!
This is a basic cream soup recipe which you can modify for any vegetable.

Wheat Pasta in easy Tomato Sauce - Tangy Red Pasta

11/2/2014

We all love cheesy creamy pasta outside, but can we do something nice at home? I had tried many times to create a good pasta at home and a much healthier version. I think this time I almost got a good red pasta version and a very healthy option too. Normal pastas are made out of refined flour - no fibre at all. I searched for Wheat pastas in the super market and finally bolted down on the Durum wheat pastas from Disano. It says "from the golden fields of Italy and it just takes 8 minutes to prepare, with a low glycemic index, low cholestrol and high levels of fiber." I had to try this one.
Some people may call this recipe as Arabiata pasta, but I'm really not sure of it's name :)
