If you are wondering what is low carb or keto? I will do a detailed post about it soon. It's a healthy lifestyle change and not some sort of a crash diet to reduce weight. Me and my husband have been following this lifestyle for more than 4 months now, and have seen very positive changes in our body and mind. It doesn't mean that we completely avoid carbs, you just need to find the right amount of carbs your body needs.

This is one such fusion recipe with mushrooms in a cheesy curry sauce. This is one such fusion recipe with mushrooms in a cheesy curry sauce. The recipe is very simple and quick. It's best for lunch with some salad or low carb breads.
Mushrooms are sautéed in butter and then simmered in a creamy sauce. The sauce is made by mixing cream cheese with some water to form a paste, and adding spices like curry powder and turmeric to it. You can add oregano, chilli flakes and crunchy bell peppers to finish the dish.
Detailed recipe:
1. Saute a pack of fresh cleaned and chopped mushrooms in a tbsp of butter. Add pepper and salt as required.
2. In a bowl, add 2-3 tbsp of cream cheese. Melt it in microwave for a minute. If you do not have a microwave, skip the melting part and mix it well with a quarter cup of water.
3. Add in 1 tsp of curry powder/ homemade sambar powder, a pinch of turmeric, oregano or your favourite seasoning to the cream cheese mixture. Mix up into a nice thick sauce.
4. Add in some chopped bell peppers for the crunch. Add in the sauce, simmer and mix up everything for a couple of mins. The dish thickens up and becomes a nice yellow mushroom curry.
That's it. Simple and comforting, you can drink it like a soup, eat with some breads/ roti, or mix in some zoodles for a creamy pasta :)
