Following Keto with Indian recipes has never been difficult for me, it's versatile and I love the fusion of cuisines to create unique flavours. This is one such fusion recipe with mushrooms in a cheesy curry sauce. I came across this fusion recipe idea on an instagram account called maria.recipes, thanks to her for sharing such a lovely idea. And if you didn't know, anyone can try this recipe, you need not follow any diet to eat yummy food :)
Mushrooms are sautéed in butter and then simmered in a creamy sauce. The sauce is made by mixing cream cheese with some water to form a paste, and adding spices like curry powder and turmeric to it. You can add oregano, chilli flakes and crunchy bell peppers to finish the dish.
1. Saute a pack of fresh cleaned and chopped mushrooms in a tbsp of butter. Add pepper and salt as required.
2. In a bowl, add 2-3 tbsp of cream cheese. Melt it in microwave for a minute. If you do not have a microwave, skip the melting part and mix it well with a quarter cup of water.
3. Add in 1 tsp of curry powder/ homemade sambar powder, a pinch of turmeric, oregano or your favourite seasoning to the cream cheese mixture. Mix up into a nice thick sauce.
4. Add in some chopped bell peppers for the crunch. Add in the sauce, simmer and mix up everything for a couple of mins. The dish thickens up and becomes a nice yellow mushroom curry.
That's it. Simple and comforting, you can drink it like a soup, eat with some breads/ roti, or mix in some zoodles for a creamy pasta :)
