Exploring world cuisines - Irish eggless soda bread, quick & no yeast or fermentation

One day in this month (March), I suddenly felt like exploring world cuisines at home. I don't quite know how I got the thought, but i wanted to randomly pick a world cuisine, read all i can about it, pick some famous dishes, and try out the recipes for you guys right from my kitchen. The idea was awesome and I was so excited! I picked Irish cuisine randomly to start with... I read a lot about their way of cooking, eating and ingredients. 

As soon as I say Irish, what are the things that come to your mind?
St. Patrick's day?
Irish coffee? Baileys? 
May be more... after researching a bit about Ireland, I came to know that its the birthplace of good music. Heard about Trinity college which certifies Music learners, thats in Ireland. Even folk music is famous, their landscapes, not to mention their beer & whiskey, etc. Their cuisine uses a lot of potato in their dishes after 16th century. It was the cheapest vegetable they could get in times of war and draught. It's a simple, hearty, seasonal and comfort cuisine. So let's have a look at some of their famous dishes, so next time you go to Ireland or a restaurant, you could give these a try.

Quick and easy eggless Tiramisu - no bake cake for a romantic dinner date at home

Tiramisu has been the most exquisite dessert for us, because of its rich coffee flavour and creamy texture. It was in my to-do list for a very long time, and I was so lazy to make it from scratch. In India it is difficult to get the ready made savoiardi or sponge finger biscuits. And mascarpone cheese availability is also an expensive and rare ingredient here. But you can make them at home if you have some patience. I was lucky that I had been to Europe last year and got a chance to get these biscuits to India. Since then I was planning to make this recipe for a special day, we are cutting calories otherwise you see :)

Tiramisu is a famous coffee-flavoured Italian dessert. It is generally made by dipping the ladyfinger biscuits in freshly brewed coffee, and layering it with a whipped custard mixture of eggs, sugar, and mascarpone cheese, flavoured with cocoa. The original recipe might be a bit tedious with beating egg yolks and we generally do not like to eat raw eggs in our cakes/desserts. So I wanted to go eggless and keep things simple and quick. Like me, you can choose to buy readymade ladyfinger biscuits (now its available online) from Nature's basket or Amazon. Or you can make do with vanilla sponge cake slices - bake them for 10 mins until they are crisp.

Beautiful flavors in one cake and just amazing! Do you love Caramel oozing on your cake? Do you love bursting citrus flavor? Nuttiness? Yes, then this is the one cake you must try without reasons. It is pretty easy and worth the time baking it, for that beautiful golden hues that you can admire all day.
Below recipe uses eggs, but I tried eggless version by replacing the egg with a 1/4 cup of hung curd. You can make the same cake with pineapples too and double the recipe for a 9" cake. This time I've tried to capture the recipe in pictures with butter and flour all over my phone. (Wonder how people take flawless pictures while cooking and hands dirty)

This has a pudding texture, soaking up all the citrus and caramel syrup. Goes well with a dollop of whipped cream or a scoop of Vanilla ice cream on top or just plain old cake.

I came across a classic Spritz cookies recipe and I knew for sure it would be awesome and melt in the mouth. But I wanted to make them healthy, so that me and my DH can indulge on them everyday without limits. Getting conscious of my calorie intake due to my baking craze at home! Wish I could bake and just sell them away for someone who would love to gobble them all happily. Done with giving them away to friends and families! Need some reward to my efforts :)
Ok.. lets get back to the Spritz cookies. I added Wheat and Ragi flour to add fibre. Retained some all purpose flour in the recipe, but you could choose to do it completely with Wheat or even use Almond flour if you get a hold of it.

I'm so excited to share this simple, yet an amazing recipe with you. It's so simple but the taste and the smell of the freshly baked loaf is just out of the world. The smell will still linger in the house after a day or two. It's so fun to be a part of these facebook baking groups, and to participate in the bake along events. If you are a beginner baker like me, you will not feel alone in the baking world out there. There are so many people to give you tips and share their experience in baking the same recipe, even with healthy replacements. Such a group is Fond bites by Subhashini. I'm so grateful and lucky to be a part of this group. This is the third bake along week I'm participating and I always look forward to new recipes every week.

This week it was a simple Lemon loaf recipe by Subhashini. But I had some sweet oranges, also called as Navel Oranges at home. The big orange coloured pretty ones, which almost looks like wax fruit. So I changed the recipe to make an orange loaf. Cutting my story short, lets get to the details of the recipe.

The pinnacle of my dreams after I started baking was to make a beautiful Black forest cake, which is my childhood favorite cake ever! I baked it for Christmas... I know Plum cake is known for christmas. I researched a lot for the best plum cake recipe, but all of them had a long preparation list and alcohol is required to add the kick to the cake. So finally i decided to save those cake recipes for next christmas, and bake my favorite Black forest cake for the first time ever. It's the other name for Celebration, all that you love - Chocolate cake, cherries and whipped cream.

Hi guys, I know I've been posting a lot of photos on facebook and instagram but no recipes yet. My bad.. I'm not finding time to sit and write the recipes. There is no technology which will do this for me ;( So here I'm writing one by one from my archive of food photographs. And you must be wondering how many panner tikka recipe have I posted... but trust me this the best of all! I made this for a family get together at my home and everybody liked it!! It was over in no time, and I had to grill another set of skewers quickly to serve them. Both kids and adults liked it, and got a compliment that it tastes better than hotels. So I'm sure you can try this recipe to surprise your loved ones at home.

Currently my new OTG is the new baby at home. As soon I reach home after a tiring day of work, I feel like baking something and treat my taste palates everyday. And this can also be a surprise treat for my hubby... :P
